Cabbage soup - simple and tasty


This type of soup was very popular some years ago as a diet - yes, diet. You were supposed to eat only that soup for a week or so to lose few pounds. Now, I don't know about its effectiveness, as I'm getting bored too easily and monotonous diets are clearly not for me, but what I do know is that it is a delicious and very easy to make meal.
You just need few ingredients, throw them in a pot and about one hour later you've got your soup ready, couldn't be simpler!

INGREDIENTS (for about 6 servings):
  • 1 small cabbage
  • 2 big onions
  • 3-4 carrots
  • 2-3 green paprikas
  • 5 fresh tomatoes
  • 500ml tomato paste
  • 1,5l chicken broth (or water for vegetarian version)
  • oregano
  • salt & pepper to taste


Cut cabbage into small pieces (2-3 cm) and throw it in a big pot. Add sliced carrots. Cut the onions into quarters, slice them up and put into the pot. Cut paprikas into small cubes and add them too. Pour water or broth, add oregano, salt and pepper and cook for about 10 minutes on a medium heat. Cut tomatoes into cubes and add to the pot.


When cabbage and carrots get softer (check it with a fork), pour tomato paste and stir to combine it with the rest of your soup. Add more salt and pepper if needed, let it cook for another 10-15 minutes and that's it! Your cabbage soup is ready!

Serve hot with some fresh bread on the side.
